Culinary uses
Calubti and dolma: This is the main purpose. Using pickled cabbage leaves allows you to skip the time-consuming blanching (boiling) of the cabbage head—they are ready to roll, don't tear, and hold their shape well.
Snack rolls: The leaves are stuffed with grated carrots, garlic, herbs, or hot peppers (for example, Korean-style rolls).
Baked fish: Large leaves are used as a "wrapper" for fish fillets (such as pollock) with sauce, which helps preserve the fish's juiciness during baking.
Cabbage schnitzels: Pickled cabbage leaves are folded into an envelope, dipped in a liaison (a mixture of eggs and milk), breaded, and fried until crispy.
Soups and salads: The leaves can be finely chopped to make rich cabbage soup, kapustnyak, or added to winter vitamin-rich salads with onions and vegetable oil.
