1. Cut cauliflower in half, then cut into florets.
2. Set rice to boil.
3. Put coconut oil in a hot pan, melt it, add onion, garlic and fry for 3-4 minutes.
4. Add the curry paste and cook for 2 minutes.
5. Add tomatoes, cauliflower, chickpeas, coconut milk, water, salt, pepper. Stir and simmer for 30 minutes.
6. Serve with rice, garnish with parsley.
