1. Dice eggplant, onion, pepper and tomatoes.
2. Pour oil into a saucepan, add pepper and onion, cook for 3-4 minutes. Add the eggplant, garlic, salt, pepper and cook for another 5-6 minutes.
3. Put tomatoes, beans, stir and cook for 20 minutes.
4. Cut bread and serve the stew with cheese and sour cream.
