1. Dice tomatoes.
2. Pour oil into a pan, put the meat, season with salt and pepper, fry for 6-7 minutes.
3. Remove the meat from the pan, pour oil, add onion, carrot, season with salt, pepper, smoked paprika, mix and cook for 5-6 minutes.
4. Cut the eggplant in half, remove the core and cut into cubes.
5. Add over vegetables, cook for 5-6 minutes. Add the meat, pour in the wine and let it evaporate.
6. Add tomato paste, tomatoes, garlic, water and cook for 25 minutes.
7. Put eggplant on a tray, season with salt, pepper, rosemary and sunflower oil. Bake for 10 minutes at 180°C.
8. Remove eggplant from the oven. Stuff with minced meat, grate cheese, bake for 25-30 minutes
