COOKING INSTRUCTIONS


1. In a food processor bowl put 300 g of flour, add a teaspoon of salt, 150 g of cold butter and mix. Then add 2-3 tablespoons of cold water and mix a little more. Transfer the dough on the table and form a ball. Wrap in cling film and refrigerate for 20-30 minutes.

2. Meanwhile, cut 300g of bacon into cubes. Fry it until golden brown and slightly crunchy. Remove from the pan and leave to cool.

3. Grate 100g of cheese.

4. Remove the dough from the fridge, dust with flour and roll out in a circle larger than the baking tray. Take a 22 cm tray with a removable bottom, transfer the dough in the tray and then cut the excess. Prick both at the base and on the edges with a fork. Bake in the preheated oven at 190°C for 15 minutes.

5. Meanwhile, break six eggs, add 150 g of sour cream and grate a bit of nutmeg, season with salt, pepper and mix. Remove the dough from the oven, put bacon, cheese and pour the egg mixture, sprinkle with cheese and bake at 190°C for 40-45 minutes.

6. Decorate with parsley.
