1. Pour olive oil into a hot saucepan, add diced onion, celery stalk, carrot, garlic, rosemary, salt, pepper and cook for 4-5 minutes.

5. Meanwhile, prepare the Bechamel sauce: put butter and flour in a saucepan, mix and keep on the fire for 3-4 minutes. Gradually pour milk. When milk starts to boil, season with salt, pepper, nutmeg.
6. Spread 1/4 Bolognese sauce in a 24x40 cm tray. Cover with lasagna sheets. Then again spread the Bolognese sauce, a ladleful of the Bechamel sauce, add Parmesan, cover with lasagna sheets, then again Bolognese sauce, Bechamel sauce, Parmesan, lasagna sheets, Bolognese sauce, Bechamel sauce, Parmesan, lasagna sheets, spread the Bechamel sauce and cover with aluminum foil.
7. Bake at 180°C for 50 minutes.
8. Remove the foil, put the Mozzarella slices, grate the Parmesan cheese and put into the oven for another 20-25 minutes or until browned.
